Heritage

Tex-Mex food has its origins in the late 1800s, when Anglo settlers in Texas began to combine traditional Mexican cooking styles and ingredients with their own culinary influences. While Texas was still part of Mexico, Anglo immigrants who moved to the region incorporated flavors and cooking techniques from their homelands into the local Mexican food, creating what became known as Tex-Mex. 



Bold Flavors

Some of the key ingredients that characterize Tex-Mex dishes are chili peppers, corn, beans, tortillas, cheese, and seasoned ground beef. Chili con carne, fajitas, queso, tortilla chips, enchiladas, tacos, burritos, and nachos are all Tex-Mex staples that blend American and Mexican tastes. This fusion of ingredients allows for a dynamic mix of flavors and textures, resulting in the unique and satisfying taste of Tex-Mex cuisine that appeals to a broad range of palates which makes it so popular.


Tex-Mex food really began to take shape and gain popularity in the early 1900s. During this time, chili con carne became one of the first dishes to achieve widespread fame. Chili parlors, where bowls of chili and tamales were sold, started opening in towns and cities across Texas. The chili was a spicy beef stew that was a Texan twist on the traditional carne con chile of northern Mexico. These chili joints helped introduce this hybrid cuisine to a wider audience. 



Bringing Tex-Mex to the Masses 

In the 1940s and 1950s, Tex-Mex continued to evolve and expand beyond the Rio Grande Valley region as more Mexican-American families opened restaurants that brought their cultural cooking styles to cities like Houston and Dallas. Dishes like chalupas, chili gravy enchiladas, and fajita tacos became commonplace. 


A couple named  Adelaida and her husband, Macario,and their 12 children gave Tex-Mex its first major boost in national recognition by opening the El Chico chain of Tex-Mex restaurants in the 1940s. They standardized recipes and popularized signature items like tortilla chips with hot sauce and queso dip, chile con queso, and the margarita. His influence established Tex-Mex as a mainstream American cuisine.
